Rams' Corner : Smoked Ham with a Sweet & Spicy Glaze


'Rams' Corner' is a series dedicated to recipes and cooking tips and tricks. Rams (aka Jorden) is my fiance, a seasoned chef turned graphic designer that never lost his passion for food.

Nothing beats a warm spring day with a cold beer in hand and a hunk of meat in the smoker. After finding a spiral sliced ham at our local grocery store, Rams used the porky find as the perfect excuse to fire up the smoker on a warm spring Sunday.

With a handful of hickory wood chips, he gave the pork a quick rub and threw it on the smoker.

Mmm look at that smoke.

While the ham was smoking we boiled a few sweet potatoes and whipped up some delicious and simple mashed sweet potatoes. Sweet potatoes (skins-in) with a little butter, milk, cinnamon, salt, pepper, and a dash of nutmeg made a perfect pair to the honey ham.

After three hours in the smoker, we transitioned the ham to the over for another two hours at 200 degrees to ensure the whole ham was warm.

Once warm all the way through we pulled the ham out for a quick sweet and spicy glaze made with sriracha hot sauce and honey. [Pro tip: try the same glaze on roasted carrots. So good!] After coating the ham with the glaze it went back in the oven for a quick 10 minutes. When we pulled it out the outside had a shiny, crisp glaze and a deliciously smokey scent.

A side of pineapple and strawberries, and our spread was complete.

HERE'S WHAT YOU NEED:

- 8-10lb Spiral sliced ham

- 4 Sweet potatoes

- 1/2 stick of butter,

- 1/4 cup of milk

- 1 tsp of cinnamon

- 1 tsp of salt

- 1 tsp of pepper,

- A dash of nutmeg

- 1/4 cup of Sriracha hot sauce

- 1/4 cup of Honey

- Whole pineapple

- Bushel of strawberries
