Rams' Corner : Orange, Rosemary, Chocolate Chip Cookies


'Rams' Corner' is a series dedicated to recipes and cooking tips and tricks. Rams (aka Jorden) is my husband, a seasoned chef turned graphic designer that never lost his passion for food.

Can you imagine a more dreamy holiday flavor combo?

In addition to the recipe being fairly simple, the combination makes for the perfect holiday aroma filling your home as they bake.

Here's what you need:

  • 2 1/3 cup + 1 Tbsp Flour

  • 3/4 tsp Baking soda

  • 1 tsp Kosher salt

  • 10 oz Semi sweet chocolate chips

  • 1/2 lb of unsalted butter

  • 1 cup Granulated sugar

  • 2 Eggs

  • 1/2 Orange zest

  • 2 Sprigs of rosemary, chopped

Here's how to craft these beauties:

As you begin to assemble your ingredients, preheat your oven to 350° F.

Grab a baking sheet (or two) and line it with parchment paper, no need to spray your tray! Then, let's get started.

  1. Sift all the flour and baking soda together in a bowl.

  2. Stir in the salt to flour, and set aside.

  3. Cube the butter.

  4. Beat half of the butter with a paddle attachment (this is Kitchen Aid talk but any mixer will do!) on medium speed until smooth.

  5. Add sugar and the remaining butter, and beat until the mixture is light and creamy.

  6. Add eggs into your butter mixture one at a time until fully incorporated.

  7. Add dry ingredients to the butter mixture and mix on low speed until fully incorporated.

  8. Lastly, add the chocolate chips, orange zest, and chopped rosemary, mixing until fully incorporated.

And that's it! Portion your cookie dough into golf ball-sized bits and place them on your lined baking sheet.

Bake for 12 minutes, rotating the baking tray in the oven half way through.
